Meet the panellists who will be joining us on the 3rd of February at 7pm (GMT) for our digital event Celebrating Chinese New Year.
There will be a panel discussion followed by a short Q&A. Topics will include:

Leona De Pasquale
Leona De Pasquale DipWSET is the Founder & Chief Educator of Camellia and Vine, a wine and tea training company focusing on providing event and training service to the hospitality sector and the general public. She is a Master of Wine student and is also a freelance wine writer, translator, certified WSET wine educator. Leona judges at various wine competitions including the IWSC. In addition to her love for wine, Leona also takes tea seriously as it’s what she grew up drinking. She has recently gained her tea qualifications (Tea Sommelier and Tea Champion) through the UK Tea Academy.
Alan Tang
Alan Tang is Restaurant Director at TīNG Restaurant, at the luxury global brand, Shangri-La The Shard, London. He was appointed to this role in January 2020.
Alan has a wealth of previous experience managing fine Chinese restaurants such as Michelin starred restaurants Hakkasan at Hanway Place, Hutong at The Shard, and the opening of Asia’s award winning restaurant – Imperial Treasure at St James’s. He has also worked in leading hotels such as Hotel Café Royal and managed the opening of Mei Ume at Four Seasons Hotel at Ten Trinity Square.
Alan was a judge for the Young Chef Young Waiter 2020 competition for the China & South East Asia category.
Cyan Wong
Cyan Wong is a London-based bartender and drinks consultant. Having originally gone to art school, she instead found herself passionate about drinks. She has worked in bars around the world, as well as opening some herself. Cyan currently works with different brands, including Madre Mezcal. She has helped open Original Sin, a cocktail bar in East London, and Mint Gun Club in 2017.
Celeste Wong
Celeste Wong is a coffee expert and consultant, born in New Zealand. She has held top positions in leading artisan cafes all over the world for over a decade. Since migrating to the UK, she has been listed as one of London’s top five Baristas in The Financial Times and noted for her excellence in a plethora of other publications. Celeste also produces and curates social media content for her own platform and other brands. She writes and consults on a range of services for cafes and lifestyle brands. She also has her own brand of Coffee Beans available via her online shop.
James Cheung
James Cheung is the owner of Jade Park restaurant, based in the Wirral. With a background in social media and marketing, he started his journey in hospitality in 2019, and was enabled to take on new challenges in the sector using his previous experience. After founding another business during the 2020 lockdown, he invested in building Jade Park, which opened in June 2020. He wanted to build a brand that represents tradition and the new generation. James considers himself still new to the industry, butis taking a different approach on things as covid and the changing industry has pushed us to move more into the digital space.
